Head Chef Chef Thomas Gimblett Racines brings the ocean closer to Fredericton, for a unique seafood experience. Located across from Fredericton's historic Officer's Square, the restaurant offers a fine dining experience in a casual atmosphere with a variety of seafood dishes, steaks, chicken, pastas and freshly made desserts. How fortunate it is for Fredericton that Racines Restaurant has chosen to open its doors there.I spend some time each summer in that city and every year until now have wondered why there is no real fine cuisine at affordable prices in such a lovely city. Racines has admirably filled that gap. The chef, from Vancouver, and trained there, and his wife have chosen to return to her roots-hence Racines- and to offer an excellent interesting menu for a quiet dinner, special occasion or well deserved self indulgence. The fish chowder is outstanding, and the salmon served with a blueberry sauce is a taste delight. Give it a try. You'll be glad you did.
We stopped into Racines last Saturday night. Amazing food, sooo good that you really take your time to enjoy the meal rather than oversized tasteless portions. I can honestly say I have never had food this good EVER and cannot wait to go back.. I would recommend Racines to everyone!
